Method
Cocktail Base
Chill glass
Place a white wine glass or a large stemmed glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the drink.
Combine base ingredients
In a mixing glass or cocktail shaker without ice, pour 5 oz of chilled dry Riesling, 0.5 oz elderflower liqueur, 0.5 oz freshly squeezed lemon juice, and 0.25 oz simple syrup. Stir gently for 10–15 seconds to integrate the liqueur and citrus without diluting the wine.
Taste and adjust
Taste the mixture quickly. If it needs more brightness, add up to 0.25 oz more lemon juice. If it needs more sweetness, add up to 0.25 oz more simple syrup. Stir again briefly after adjusting.
Sparkle & Finish
Assemble the cocktail
Pour the blended wine and liqueur mixture over the ice in the chilled glass. Top with 1 oz chilled club soda or sparkling water to add a light effervescence. Gently stir once with a bar spoon to combine — one long, slow stir to preserve carbonation.
