Cocktail

1

Chill glass

Place a coupe or martini glass in the freezer for 5–10 minutes, or fill with ice water while you prepare the cocktail to properly chill the glass.

2

Combine ingredients

In a cocktail shaker, add 2 oz Castle and Key gin or vodka, 0.5 oz St-Germain, 0.5 oz Lillet Blanc, 0.5 oz Cointreau, 0.5 oz fresh lemon juice, and 0.25 oz simple syrup.

3

Add ice and shake

Fill the shaker with ice (about 6 medium cubes). Secure the shaker lid and shake vigorously for 12–15 seconds, until the outside of the shaker is well chilled and slightly frosted.

4

Double strain and serve

Discard the ice or water from the chilled glass. Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and any pulp.

Garnish & Finish

5

Express the oils of a lemon twist over the cocktail by holding the twist over the glass and giving it a quick pinch so citrus oils spray onto the surface. Run the twist around the rim if desired, then drop it into the drink.

6

Optional: add an edible flower or a small sprig of microherbs to the surface for an aromatic, visual touch.

7

Serve immediately. The Citrus Cut is best enjoyed chilled and consumed within a few minutes so the aromatics remain bright.
