Chill glass

If possible, pre-chill a white wine glass in the refrigerator for 10–15 minutes to keep the wine cool without diluting it. If serving immediately and the room is warm, fill the glass briefly with ice water, then discard before pouring.

If you prefer a very cold drink and want a small amount of dilution, add 1–2 ice cubes to the glass. Otherwise serve without ice for best aromatic expression.

Pouring

Hold the bottle at the base, open and wipe the neck dry. Pour 6 oz (one standard by-the-glass pour) of the chilled dry white wine into the prepared glass. Pour gently down the side to preserve bubbles if using a sparkling or semi-sparkling style.

If desired, add 1 oz chilled club soda to the poured wine to create a lighter, spritz-style pour. Stir gently once with a bar spoon to integrate.

If you prefer a slightly sweeter balance, add 1 tsp simple syrup and stir gently until incorporated.

Express the lemon twist over the glass by holding it over the wine and bending it to release oils, then rub the peel around the rim and drop it into the glass. Gently slap the mint sprig between your hands to release aromatics and place it on the rim or float in the wine.

Serve immediately. Recommend tasting note: bright citrus and green herb aromas with a crisp finish — ideal for light starters and warm-weather sipping.
