Method
Cocktail
Prepare glass
If you prefer a salted rim, pour the coarse kosher salt onto a small plate. Rub a lime wedge around the outer rim of a rocks or coupe glass, then gently press the rim into the salt to coat about half to three-quarters of the edge. Set the glass aside.
Combine ingredients
In a cocktail shaker, add 2 oz blanco tequila, 1 oz Cointreau, 1 oz freshly squeezed lime juice, 0.25 oz agave syrup (if using for slight sweetness), and 2 dashes orange bitters.
Ice and shake
Add about 6 ice cubes to the shaker. Secure the lid and shake vigorously for 10–15 seconds, until the shaker is very cold and slightly frosted.
Strain
Double-strain the cocktail into the prepared glass over fresh ice (for a rocks presentation) or without ice into a chilled coupe. Use a fine mesh strainer in addition to the shaker strainer to remove small ice shards and pulp for a smooth texture.
Top (optional)
If you want a lighter, fizzy finish (optional), gently top the cocktail with 1 oz club soda or sparkling water. Do not stir vigorously; a gentle pour preserves carbonation and balance.
Garnish & serve
Garnish with a lime wheel or wedge on the rim. Serve immediately.
