Chill and combine

Ensure both non-alcoholic sparkling white and non-alcoholic dry white are well chilled (ideally 40–45°F / 4–7°C). Pour 1 glass of sparkling white into a clean wine glass, then gently add 1/2 glass of the non-alcoholic dry white down the side of the glass to preserve bubbles.

Prepare lemon twist and mint

Take the long lemon peel and express the oils over the surface of the drink by holding the peel skin-side down about 2–3 inches above the glass and giving it a firm squeeze across a fold so the oils spray onto the liquid. Drop the peel into the glass.

Lightly clap the mint leaves between your palms to release aroma (do not bruise heavily). Gently lay the mint on top of the wine. Stir once gently with a bar spoon (one slow full rotation) to incorporate the elderflower cordial without flattening the bubbles.

Add 1/2 tsp elderflower cordial by dripping it down the inner side of the glass so it blends subtly into the drink.

Garnish

Float the thin lemon wheel on the surface or affix it to the rim. If using, place an edible flower on top of the mint for an elegant finish.

Serve immediately while cold and effervescent.
