Prepare glass

Chill a white wine glass or large rocks glass in the freezer for 5–10 minutes, or fill with ice while prepping ingredients and then discard excess before building.

Add 0.5 tablespoon fresh lemon juice and 0.5 tablespoon simple syrup to the bottom of the glass (or to a mixing glass). If using orange liqueur, add 0.25 teaspoon now. Add 1 dash Angostura bitters if desired for depth.

Fill the glass with a large cube or enough ice to chill (about 1 cup). Pour 6 ounces chilled Canyon Road California Chardonnay over the ice slowly to preserve bubbles and aromatics.

Top with 2 ounces chilled club soda. Gently stir once or twice with a bar spoon to combine — avoid vigorous stirring so the wine retains its character.

Garnish & Serve

Garnish with a lemon wheel or twist on the rim. Optionally smack a mint sprig between your palms and tuck beside the lemon for added aroma.

Serve immediately with a short straw or without. Suggestion: enjoy as a light, refreshing white-by-the-glass spritz that pairs well with seafood, light salads, and soft cheeses.
