Method
Make the Crispelle

Prepare the Batter
In a mixing bowl, combine the all-purpose flour, sour cream, eggs, baking powder, and salt. Whisk until smooth.

Cook the Crispelle
Heat a non-stick skillet over medium heat. Pour a small amount of batter into the skillet, spreading it into a round shape. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown. Repeat with remaining batter.

Adjust Seasoning
Taste and adjust seasoning if necessary, adding more salt or lemon juice as desired.
Prepare the Buttered Radishes

Sauté the Radishes
In a small skillet, melt the unsalted butter over medium heat. Add the halved radishes and sauté for about 5-7 minutes until tender and slightly caramelized.

Season
Season with salt and black pepper to taste.
Assemble the Dish

Plate the Crispelle
Place a crispelle on each plate. Spread a generous dollop of ramp buttercream on top.

Top with the sautéed buttered radishes and finish with chive blossoms for garnish.
