Mushroom Tare Preparation

    Make the Tare

    In a saucepan, combine soy sauce, mirin, sake, and brown sugar. Stir well and bring to a simmer over medium heat.

    Add Shiitake Mushrooms

    Add the dried shiitake mushrooms to the saucepan. Reduce the heat to low and let it simmer for about 20 minutes until the mixture thickens slightly.

    Strain the Mixture

    Once thickened, remove from heat and strain the tare through a fine sieve to remove the mushrooms. Set aside to cool.

    Prepare the Mushrooms

    Clean the Lion’s Mane mushrooms gently with a damp cloth. Cut them into thick slices.

    Prepare the Leeks

    Trim the farm leeks and slice them into 2-inch segments.

    Skewering

    Thread the mushroom slices and leek segments onto skewers alternately. Brush them lightly with olive oil and season with salt and black pepper.

    Grilling

    Preheat a grill or grill pan over medium-high heat. Grill the skewers for about 5-7 minutes on each side, brushing with the mushroom tare during the last few minutes of grilling.

    Serve

    Once cooked, remove from heat, garnish with freshly grated horseradish, and drizzle with any remaining tare. Serve warm.
