Method

Naan Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.

    Make Dough

    In a large mixing bowl, combine flour and salt. Make a well in the center, then add the yogurt, olive oil, and the activated yeast mixture. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let it Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Prepare Green Garlic Togarashi

    Mix Ingredients

    In a small bowl, mix the chopped green garlic with Togarashi spice blend. Set aside.

Prepare Sweet Pea Hummus

    Blend Hummus

    In a food processor, combine sweet peas, tahini, minced garlic, lemon juice, olive oil, and salt. Blend until smooth and creamy.

    Adjust Consistency

    If the hummus is too thick, add a little water and blend again until desired consistency is reached.

Fermented Honey Preparation

    Combine Ingredients

    In a jar, mix honey with apple cider vinegar. Stir to combine and let it sit at room temperature for 24 hours.

Cooking Naan

    Shape Dough

    Once the dough has risen, punch it down and divide it into 6 equal portions. Shape each portion into a ball.

    Roll Out Naan

    On a floured surface, roll out each ball into an oval or round shape, about 1/4 inch thick.

    Cook Naan

    Heat a skillet or tandoor over medium-high heat. Cook each naan for about 2-3 minutes, until bubbles form and the bottom is golden brown. Flip and cook for an additional 1-2 minutes.

    Apply Green Garlic Togarashi

    Immediately after cooking, brush the naan with a little olive oil and sprinkle with the green garlic togarashi mixture.

    Serve the warm naan with sweet pea hummus and drizzled fermented honey on top.
