Crust Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Mix Crust Ingredients

    In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan. Use a flat-bottomed glass to pack it tightly.

    Bake the Crust

    Bake the crust in the preheated oven for 10 minutes. Remove from oven and let cool while you prepare the filling.

Cheesecake Filling Preparation

    Beat Cream Cheese

    In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy.

    Add Sugar and Sour Cream

    Gradually add granulated sugar and sour cream to the cream cheese, mixing until well combined and smooth.

    Incorporate Vanilla and Eggs

    Add vanilla extract and mix well. Then, add the eggs one at a time, mixing on low speed until just combined. Do not overmix.

    Pour Filling into Crust

    Pour the cheesecake filling into the cooled crust, spreading it evenly.

    Bake the Cheesecake

    Bake in the oven at 350°F (175°C) for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

    Cool the Cheesecake

    Turn off the oven and crack the oven door open. Let the cheesecake cool in the oven for 1 hour. Then refrigerate for at least 4 hours, preferably overnight.

Strawberry Topping Preparation

    In a bowl, combine sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat the strawberries.

    Let the strawberries sit for about 30 minutes to allow the juices to release and create a syrup.

    Once the cheesecake is chilled, remove it from the springform pan and top with the strawberry mixture just before serving.
