Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

Coat the Calamari
Dredge the calamari rings in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C).

Fry the Calamari
Working in batches, carefully add the coated calamari rings to the hot oil. Fry for about 2-3 minutes or until golden brown. Use a slotted spoon to remove them and place on paper towels to drain.

Add Tomatoes and Seasonings
Add the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Stir to combine.

Simmer the Sauce
Bring the sauce to a simmer and let it cook for about 15-20 minutes, stirring occasionally. Adjust seasoning to taste.

Finish with Fresh Basil
Stir in the chopped fresh basil just before serving.
