Prep the pork
Trim any excess fat from the pork tenderloin and slice across the grain into 1/8–1/4-inch thin slices. If needed, partially freeze pork for 20–30 minutes to make slicing easier.

Marinate
Combine the marinade ingredients (1 tbsp light soy sauce, 1 tbsp Shaoxing wine, 1 tsp cornstarch, 1/2 tsp sesame oil, 1/4 tsp white pepper) in a bowl. Add the sliced pork and toss to coat. Let sit 15–20 minutes while you prepare vegetables.

Cook pork
Heat a large wok or skillet over high heat until very hot. Add 1 tablespoon of vegetable oil and swirl to coat. Add the marinated pork in a single layer (work in two batches if necessary) and stir-fry quickly until just cooked through and slightly browned, about 2–3 minutes. Remove pork to a plate and set aside.

Stir-fry vegetables
Add the remaining 1 tablespoon vegetable oil to the hot wok. Add the sliced onion and stir-fry 30–45 seconds until fragrant and slightly softened. Add the minced garlic and ginger and stir 10–15 seconds until aromatic (do not burn). Add the sliced mushrooms and stir-fry 1–2 minutes until they release moisture and start to brown. Add snow peas and stir-fry 45–60 seconds until bright green and crisp-tender.

Combine
Return the cooked pork to the wok and toss with the vegetables to combine, 20–30 seconds.
Sauce

While the pork is resting, whisk together the sauce ingredients in a small bowl: 1.5 tbsp oyster sauce, 1 tsp light soy sauce, 1/2 cup chicken or vegetable stock, and 1/2 tsp sugar.

Make the slurry by mixing 1 tsp cornstarch with 2 tbsp cold water until smooth. Give the sauce a quick stir and pour it into the wok with the pork and vegetables.

Stir constantly as the sauce comes to a simmer; the slurry will thicken the sauce in about 30–60 seconds. Toss everything to coat evenly and cook an additional 30 seconds so flavors meld.
Finishing & Garnish

Taste and adjust seasoning with up to 1/4 tsp salt and 1/4 tsp freshly ground white or black pepper as needed. If using, drizzle 1/4 tsp toasted sesame oil and sprinkle sliced scallions over the top.

Transfer to a serving plate and serve immediately with steamed rice or noodles.
