Prepare pork
Trim any excess fat from the pork tenderloin and slice across the grain into 1/8–1/4-inch thick slices. Place slices in a medium bowl and combine with the Marinade ingredients (2 tbsp light soy sauce, 1 tbsp Shaoxing wine, 1 tsp cornstarch, 1 tsp sesame oil, 1 tsp white pepper). Toss to coat thoroughly and let sit for 15–20 minutes to tenderize and flavor.

Make sauce
In a small bowl whisk together the Sauce ingredients: 1 cup chicken broth, 1 tbsp oyster sauce, 1 tsp light soy sauce, 1 tsp sugar. In a separate small cup, dissolve 1 tsp cornstarch in 1–2 tbsp cold water and set aside as slurry.

Prep vegetables and aromatics
Trim snow peas by snapping off the strings and removing any tough ends. Wipe mushrooms clean with a damp cloth and slice. Mince garlic, mince ginger, and cut green onions into 1-inch pieces. Have all ingredients within reach (mise en place).

Stir-fry pork
Heat a wok or large skillet over high heat until very hot. Add 1 tablespoon neutral oil and swirl to coat. Add the marinated pork in a single layer (work in batches if necessary to avoid crowding). Stir-fry until the pork is just cooked through and starting to brown, about 2–3 minutes. Remove pork to a plate and set aside.

Cook mushrooms and aromatics
Add the remaining 1 tablespoon oil to the wok. Add sliced mushrooms and stir-fry for 1–2 minutes until they begin to release moisture. Add minced garlic and ginger and stir-fry another 30 seconds until fragrant.

Add snow peas
Add the snow peas and the white parts of the green onions to the wok. Stir-fry for 1–2 minutes — you want them bright green and crisp-tender, not soggy.

Combine and finish
Return the cooked pork to the wok. Give the prepared sauce a quick stir and pour it over the contents. Stir to combine and bring to a simmer. Pour in the cornstarch slurry while stirring to thicken the sauce; cook 30–60 seconds until sauce is glossy and coats the ingredients. Taste and adjust seasoning with up to 1/2 tsp salt and an extra 1/4 tsp white pepper if needed. Drizzle 1 tsp toasted sesame oil over the finished stir-fry and toss to combine. Garnish with the green tops of the green onions.
