Crab & filling

    Prepare filling

    In a medium bowl, combine the softened cream cheese and chopped imitation crab. Use a fork to mash and blend until mostly smooth with small crab flakes remaining.

    Add the minced garlic, finely minced green onion, soy sauce, sesame oil, white pepper, and sugar. If using, stir in the grated carrot. Mix thoroughly until well combined and evenly seasoned. Taste and adjust seasoning (a tiny pinch more soy or sugar) as desired.

    Place the filling bowl in the refrigerator for 10 minutes to firm slightly — this makes spooning and sealing easier.

Wonton wrappers & assembly

    Set up an assembly station: a clean work surface, a small bowl of cold water for sealing, the filling chilled and a plate lined with parchment for finished wontons.

    Fill and fold (basic flower or purse shape for Rangoon)

    Lay one wonton wrapper flat. Place about 1 tablespoon (level) of the chilled filling in the center. Dip your finger into the bowl of cold water and brush lightly around the edges of the wrapper. Gather the edges up around the filling to form a small purse or flower, pinching the top to seal completely. Repeat with remaining wrappers and filling (should make about 16 small wontons). Keep finished wontons covered with a damp towel if not frying immediately.

    If wrappers are square and you prefer a 'crunchy cup', fold diagonally into a triangle, place filling near the wide end and fold up into a small cone, sealing edges with water.

Cooking

    Pour about 1 cup neutral oil into a small saucepan or deep skillet to a depth of about 1.5 inches. Heat over medium-high until the oil reaches 350°F (175°C) or a small piece of wrapper sizzles and browns in about 30–45 seconds. Fry 4–6 wontons at a time (do not overcrowd), turning occasionally, until golden brown and crisp, about 2–3 minutes. Use a slotted spoon to transfer to a paper towel–lined plate to drain. Repeat with remaining wontons, returning oil to temperature between batches.

    Shallow-fry alternative

    If you prefer less oil, heat 2 tablespoons oil in a skillet over medium heat. Add wontons seam-side down and cook 2–3 minutes until golden, then turn carefully and cook the other sides, pressing gently, until crispy and heated through (about 4–6 minutes total). Work in batches and add a little more oil as needed.

    For a baked option (less traditional): preheat oven to 400°F (200°C), brush or spray wontons with oil, place on a parchment-lined sheet and bake 8–12 minutes until golden and crisp, watching closely.

Garnish & serving

    Arrange warm Rangoon wontons on a serving plate. Sprinkle with thinly sliced chives or green onion and toasted sesame seeds if desired.
