    Activate yeast

    In a small bowl combine warm water (temperature about 100–110°F / 37–43°C), warm milk and granulated sugar. Sprinkle the active dry yeast over the surface, stir gently, and let sit 5–7 minutes until foamy.

    Mix dry ingredients

    In a large mixing bowl whisk together the all-purpose flour and salt.

    Combine dough

    Add the foamy yeast mixture, melted butter and the egg to the flour. Stir with a wooden spoon or use a stand mixer with a dough hook until the dough comes together. If dough is very sticky, add up to 2 tbs more flour, a tablespoon at a time; if very dry, add 1–2 tbs water.

    Knead

    Turn the dough onto a lightly floured surface and knead about 6–8 minutes until smooth and elastic (or knead 4–5 minutes in a stand mixer on low). Shape into a ball.

    First rise

    Place the dough ball in a lightly oiled bowl, cover with plastic wrap or a damp towel, and let rise in a warm draft-free place until doubled in size, about 60–75 minutes.

    Prepare filling

    While the dough rises, combine grated cheddar, shredded mozzarella, softened cream cheese, chopped chives, garlic powder and black pepper in a bowl. Mix until evenly combined. Taste and adjust seasoning.

Assemble & Bake

    Shape rolls

    After the dough has doubled, gently punch it down and turn it out onto a lightly floured surface. Roll the dough into a rectangle about 12 x 8 inches. Spread the cheese filling evenly over the dough, leaving a 1/2-inch border on the long edge. Starting from the long side, roll the dough tightly into a log. Pinch the seam to seal.

    Portion

    Using a sharp knife or bench scraper, cut the log into 6 equal pieces. Place each roll cut-side up (or seam-side down, your preference) into a lightly greased 9-inch round cake pan or a baking sheet lined with parchment, leaving a little space between rolls for expansion.

    Second rise

    Cover the assembled rolls loosely with plastic wrap or a towel and let rise in a warm place until puffy, about 25–35 minutes. Preheat oven to 375°F (190°C) during the last 10 minutes of the rise.

    Egg wash

    Whisk the egg and 1 tsp milk together. Brush the tops of the rolls gently with the egg wash. Sprinkle with optional sesame or poppy seeds if using.

    Bake

    Bake in the preheated 375°F (190°C) oven for 18–22 minutes, until the rolls are golden brown and cheese is melted inside. If the tops brown too quickly, tent with foil for the last 5–7 minutes.

    Finish

    Remove from oven and immediately brush the tops with 1 tbsp melted butter. Let the rolls cool in the pan 5–10 minutes, then transfer to a wire rack and serve warm.
