Beef & Marinade

    Slice and marinate beef

    Thinly slice the flank steak across the grain into 1/8–1/4 inch strips. Place the slices in a bowl and add 3 tbs soy sauce, 1 tbs shaoxing wine, 1 tsp cornstarch, 1 tsp vegetable oil, and 1 tsp white pepper. Mix thoroughly so each piece is coated. Let marinate 15–20 minutes at room temperature (or up to 1 hour in the refrigerator).

Sauce & Seasoning

    While the beef marinates, combine 1 tbs oyster sauce, 1 tsp hoisin sauce, 1 tsp dark soy (optional), 1 tsp sugar, 3 tbs stock (or water), and 1 tsp sesame oil in a small bowl. Stir until sugar dissolves and set aside.

Aromatics & Vegetables

    Trim the green onions. Cut the white parts into 1–1.5 inch pieces and slice the green tops on a diagonal into 1–2 inch pieces. Mince the garlic and ginger. If using onion, thinly slice it now.

Stir-fry & Finish

    Heat a large wok or heavy skillet over high heat until very hot. Add 1 tbs neutral oil and swirl to coat.

    Add the marinated beef in a single layer (do not overcrowd). Stir-fry, spreading the pieces so they sear, for about 1–2 minutes until the surfaces brown but the centers are still slightly underdone. Remove beef to a plate and set aside.

    Return the wok to high heat and add the remaining 1 tbs oil. Add the minced garlic and ginger and stir-fry 10–15 seconds until fragrant (do not burn). If using sliced onion, add it now and stir-fry 30–45 seconds until slightly softened.

    Add the white parts of the green onions and stir-fry 20–30 seconds until they begin to soften.

    Return the beef and any accumulated juices to the wok. Pour the prepared sauce over the beef and toss to combine. Stir-fry for 30–45 seconds to heat through.

    If you prefer a slightly thicker sauce, stir the cornstarch slurry (1 tsp cornstarch + 1 tbs water) to recombine and add it to the wok now. Stir constantly until the sauce thickens and becomes glossy, about 15–30 seconds.

    Add the green tops of the scallions, toss briefly (5–10 seconds) just to wilt them, then remove from heat. Taste and adjust seasoning with a pinch of salt or an extra splash of soy if needed.

To Serve

    Transfer Beef with Green Onion to a serving plate. Sprinkle with toasted sesame seeds if using. Serve immediately with steamed rice.
