Soda Base

Method

Soda Base

  1. 1

    Make a quick simple syrup

Combine the 2 tablespoons granulated sugar and 2 tablespoons water in a small saucepan or microwave-safe container. Heat gently until the sugar is fully dissolved and the liquid is clear (about 1–2 minutes on medium heat or 30–45 seconds in the microwave). Stir and let cool for a few minutes. This ensures the sugar disperses evenly in the carbonated water.

  2. 2

Measure 2 cups of cold carbonated water (club soda or seltzer) into a chilled pitcher or large mixing glass. Keep it cold to preserve carbonation.

Citrus/Lime Flavor

  1. 3

Juice fresh limes and lemons. Combine 1 tablespoon fresh lime juice and 2 teaspoons fresh lemon juice in a small bowl. If using, add 1 teaspoon each of lime and lemon zest to intensify aroma.

  2. 4

Add the cooled simple syrup to the citrus juices and stir to combine. Taste and adjust: if you prefer sweeter, add up to 1 additional teaspoon of syrup; for tarter, add a few drops more lime juice.

Aroma & Finish

  1. 5

Very gently pour the citrus-syrup mixture into the measured carbonated water. Pour down the side of the pitcher or stir very gently with a bar spoon to avoid losing carbonation. Taste and add 1 teaspoon pure vanilla extract only if you want a faint rounded sweetness (optional).

  2. 6

Fill a serving glass with ice (about 1 cup). Pour the prepared Sprite over the ice. Garnish with a lime wheel or wedge and a lemon twist. Serve immediately while fizzy.
