Chill and slice yellowtail
Keep the yellowtail well chilled until ready to serve. Using a very sharp, long-bladed knife, slice the yellowtail across the grain into 1/8–1/4-inch (3–6 mm) thin sashimi slices. Arrange 6–8 slices per serving on a chilled plate with a small gap between pieces so sauce can mingle underneath.

Prepare jalapeño and garnishes
Thinly slice the jalapeño into rounds (remove seeds for less heat). Thinly slice the green onion on the bias. If using microgreens or cilantro, rinse gently and spin or pat dry. Toast sesame seeds in a dry skillet over medium heat for 1–2 minutes until fragrant, then remove from heat.
Ponzu & Finishing Sauce

In a small bowl, combine the ponzu sauce (3 tbsp), fresh lime juice (1/2 tbsp), light soy sauce (1/2 tsp), mirin (1/2 tsp, optional), grated ginger (1/2 tsp, optional) and kosher salt (1/8 tsp). Whisk briefly to combine and taste; adjust acidity with a few more drops of lime or ponzu if desired. Stir in the toasted sesame oil (1/4 tsp) last for aroma.

If serving family-style, pour a small amount of the ponzu mixture (~1/2 tbsp) lightly over each slice of yellowtail just before adding jalapeño so the fish is lightly dressed but not saturated.
Assembly & Serve

Place 6–8 yellowtail slices per serving on the plate. Spoon or gently drizzle ~1/2 tbsp of the ponzu finishing sauce over the fish pieces so they glisten.

Finish by sprinkling the toasted sesame seeds evenly and adding a very light drizzle (a few drops) of toasted sesame oil if extra aroma is desired. Serve immediately so the fish is at proper temperature and texture.

Optional: Provide extra ponzu at the table and small spoons so guests can add more sauce to taste.
