    Prepare water

    Chill the filtered water in the refrigerator until very cold (about 1–2 hours). Cold water carbonates more effectively and retains fizz longer.

    Fill carbonator

    Pour the chilled filtered water into the bottle of your soda siphon or home carbonator. Do not exceed the recommended fill line.

    Carbonate

    Charge with CO2 according to the manufacturer's instructions. For a typical home carbonator, apply one to two cartridges or set CO2 level to medium-high. Agitate gently if recommended, then let the bottle sit upright for 1–2 minutes to allow CO2 to dissolve.

    Test and adjust

    If the carbonation seems light, add another short burst/charge (following device guidance). Be careful not to over-pressurize the device.

Mineral/Flavor Minerals (optional)

    Dissolve minerals

    If you want club soda that mimics commercial products, dissolve the baking soda, pinches of sea salt and Epsom salt (or magnesium chloride) in 2 tablespoons of warm filtered water. Stir until fully dissolved.

    Combine with carbonated water

    Add the dissolved mineral solution to the carbonated water slowly to retain fizz. Pour gently down the side of the bottle or glass and stir very gently with a long spoon once to distribute. Taste and adjust: add more baking soda for slightly rounder mouthfeel or a touch more sea salt for minerality, but keep additions minimal.

    Optional aroma

    If using a citrus peel, rub the peel over the rim of the serving glass and drop it into the bottle or glass for a subtle aromatic note. Do not leave large pieces of peel in the bottle for long, as oils can become overpowering.

    Serve immediately over ice if desired, or use in cocktails. Store any unused carbonated water in a sealed bottle in the refrigerator and consume within 1–2 days for best fizz.
