Freeze mozzarella
Arrange the 12 mozzarella sticks in a single layer on a baking sheet lined with parchment or wax paper. Freeze uncovered for at least 30 minutes (ideally 1–2 hours). Freezing firms the cheese so it holds shape during breading and frying.

Set up a breading station near the freezer: three shallow bowls or rimmed plates (flour, egg wash, breadcrumbs). Keep the baking sheet with frozen cheese close by so sticks stay cold while working in small batches.

Prepare dry and wet mixtures
In the first shallow bowl combine 1 cup all-purpose flour and the 2 tablespoons reserved flour (used for light dusting) — you can keep a small separate dish of the 2 tablespoons. Season the main flour lightly with 1/4 teaspoon salt and 1/8 teaspoon pepper if desired. In the second bowl whisk together 3 large eggs and 3 tablespoons whole milk until smooth. In the third bowl combine 2 cups breadcrumbs, 1 tablespoon grated Parmesan, 1 teaspoon dried Italian seasoning, 1 teaspoon garlic powder, 1 teaspoon salt, and 1 teaspoon black pepper; mix thoroughly.

Three-coat method
Working with 2–3 sticks at a time (so they remain very cold), lightly dust each frozen mozzarella stick in the flour (shake off excess). Then dip into the egg wash, letting excess drip back into the bowl. Press thoroughly into the breadcrumb mixture so a good layer adheres. For a firmer coating repeat the egg wash and breadcrumbs once more for a double-coated crust. Place breaded sticks back on the tray and return to the freezer for 15–30 minutes before frying — this step reduces cheese leakage.

Heat oil
Pour about 3–4 cups neutral oil into a heavy-bottomed Dutch oven or deep skillet; you need a 2–3 inch depth for frying. Heat oil over medium-high heat until it reaches 350°F (175°C) on a thermometer. If you don't have a thermometer, test by dropping a small piece of breadcrumb into the oil—it should sizzle and brown in about 30–45 seconds.

Fry in batches
Fry the breaded mozzarella sticks in small batches (3–4 at a time, depending on pot size) to avoid overcrowding. Lower each stick gently with a spider/skimmer into the oil. Fry for 45–60 seconds, turning once, until golden brown. Do not over-fry; mozzarella melts quickly and will leak if cooked too long. If coating is very thick or sticks are large, total fry time may be up to 75 seconds—watch carefully.

Drain and rest
Using a slotted spoon or spider, remove sticks and place on a paper towel–lined wire rack or plate to drain. For best texture, place on a wire rack so bottoms stay crisp. Let rest 1–2 minutes before serving so the interior sets slightly.
