Chocolate Mousse

Prep chocolate
Place the 8 oz chopped 70% chocolate in a medium heatproof bowl; set aside.

Make a chocolate custard base (créme anglaise style)
In a small saucepan, combine 1 cup whole milk and 1 tsp instant espresso (if using). Heat over medium until just simmering and small bubbles form at the edge. Meanwhile whisk 4 egg yolks with 3 tablespoons granulated sugar in a heatproof bowl until pale and slightly thickened. Slowly temper the hot milk into the yolks in three additions, whisking constantly. Return the mixture to the saucepan and cook over low heat, stirring constantly with a wooden spoon or spatula, until it coats the back of the spoon and reaches 170–175°F (it should thicken but not scramble). Immediately pour the hot custard over the chopped bittersweet chocolate and let sit 1 minute.

Emulsify chocolate base
Stir the chocolate and custard mixture gently until smooth and glossy. Add 1 tsp vanilla extract and 1 pinch kosher salt. If needed, warm briefly over a bain-marie while stirring to fully melt any remaining chocolate. Let the chocolate base cool to room temperature (about 20–30 minutes), stirring occasionally to keep it even.

Whip cream and fold
Whip 1.5 cups heavy cream to soft peaks (do not overbeat). Fold one-third of the whipped cream into the cooled chocolate base to lighten it, using gentle strokes. Fold in the remaining cream in two additions until homogeneous and airy. Taste and adjust salt or vanilla if desired. Transfer the mousse to a piping bag fitted with a round tip, or keep in a bowl for assembly.

Warm cream and make ganache
Place 4 oz chopped semi-sweet chocolate in a small bowl. Heat 1/2 cup heavy cream in a small saucepan over medium until it just begins to simmer. Pour the hot cream over the chocolate and let sit 30 seconds, then stir to combine into a smooth ganache. Add 1 tablespoon room-temperature unsalted butter and 1 teaspoon corn syrup (if using) and stir until glossy. Let cool slightly but keep the ganache pourable/warm (about 5–10 minutes) — it should be pourable but not scalding for assembling.

Optional consistency adjustment
If the ganache firms too much, gently warm it in short bursts in the microwave (5–8 seconds) or over a bain-marie until pourable. If it is too thin, chill briefly and stir until it thickens to a syrupy pouring consistency.

Create mousse shell
Pipe or spoon a generous layer of mousse into each flute, filling about two-thirds of the height but leaving a central well for the molten ganache. To create a reservoir: press the mousse up the sides with the back of a small spoon or the piping tip, leaving a hollow center about 1 to 1 1/2 inches wide and running lengthwise down the middle.

Add molten chocolate
Using a small spoon or a squeeze bottle, pour about 1 tablespoon (15–20 ml) of warm ganache into the central well of each mousse flute. The ganache should sit as a molten center. If desired, gently press a small spoon into the ganache to create a clean pocket.

Top with mousse and chill (optional)
Pipe or spoon a small amount of remaining mousse to close around the ganache (optional) or leave the ganache exposed for a molten center. Smooth the top. Chill the assembled flutes in the refrigerator for at least 30 minutes to allow mousse to set slightly; for firmer texture chill up to 2 hours. If you prefer the ganache very molten, serve immediately after adding the warm ganache.

Whipped cream and final garnish
Whip 1/2 cup heavy cream with 1 teaspoon powdered sugar to soft peaks and pipe a small rosette on each flute. Dust lightly with 1/2 teaspoon cocoa powder (use a fine sieve). Sprinkle 2 tablespoons dark chocolate shavings over all and optionally top each flute with 1 fresh raspberry. Serve chilled or at cool room temperature.

Serving suggestion
Serve each guest a spoon so they can break into the mousse and release the molten chocolate center. Best enjoyed within 24 hours of assembly for optimal texture.
