    Prepare chicken

    If not using pre-cooked chicken: poach 2 large boneless skinless chicken breasts in gently simmering water (or low-sodium chicken broth) for 12–15 minutes until internal temperature reaches 165°F (74°C). Remove, let rest 5 minutes, then shred or dice into roughly 1/2-inch pieces. You should have about 3 cups cooked chicken.

    Toast pecans

    Place pecans in a dry skillet over medium heat. Toast, stirring often, 3–5 minutes until fragrant and lightly browned. Remove to a plate to cool, then roughly chop.

    Core and thinly slice the apple (leave the skin on for texture). Toss apple slices immediately with 1 teaspoon lemon juice (reserve from the lemon wedges) to slow browning if not using right away.

    Thinly slice celery and finely chop chives or parsley if using.

    In a large bowl combine the mixed salad greens, shredded chicken, sliced apples, sliced celery, and dried cranberries. Reserve the toasted pecans and cheese for topping to maintain crunch and texture.

Dressing

    In a medium bowl or jar add Greek yogurt, mayonnaise, apple cider vinegar, honey, Dijon mustard, lemon juice, olive oil, salt, and black pepper.

    Whisk vigorously (or shake in a lidded jar) until the dressing is smooth and emulsified. Taste and adjust: add more honey for sweetness, more vinegar or lemon for brightness, or a pinch more salt if needed. Dressing should be creamy and pourable.

Assembly & Serve

    Just before serving, pour about 3/4 cup of dressing over the large bowl of salad (reserve extra dressing to serve on the side). Gently toss until ingredients are evenly coated. Use less dressing if you prefer a lighter coating.

    Transfer salad to a serving platter or divide among 4 plates. Sprinkle toasted pecans and crumbled feta or goat cheese evenly over the top. Garnish with chopped chives or parsley.

    Serve immediately with lemon wedges on the side for an extra bright squeeze. Store any leftover dressing separately in the refrigerator up to 4 days; assembled salad is best eaten within a few hours to maintain apple and pecan texture.
