Method

Preparing the Sauerkraut

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove and let them drain on a paper towel.

    Sauté the Fennel

    In the same skillet, add olive oil and diced fennel. Sauté for about 5-7 minutes until soft and slightly caramelized.

    Combine Ingredients

    Add the cooked bacon (crumbled), sauerkraut, salt, and black pepper to the skillet with the fennel. Stir well and cook for an additional 5 minutes. Set aside.

Making the Dijonnaise

    Mix Ingredients

    In a small bowl, combine Dijon mustard and mayonnaise. Mix until well blended and set aside.

Assembling the Sandwich

    Toast the Bread

    Toast the sourdough slices until golden brown in a toaster or on a skillet.

    Spread Dijonnaise

    Spread a generous layer of dijonnaise on one side of each slice of toasted sourdough.

    Layer the Pastrami and Cheese

    On two slices of sourdough, layer the black pepper pastrami and Swiss cheese.

    Add the Sauerkraut

    Top the pastrami and cheese with the bacon fennel sauerkraut mixture.

    Complete the Sandwich

    Place the remaining slices of sourdough on top, dijonnaise side down.

    Grill the Sandwich

    In a skillet over medium heat, grill the sandwich for 3-4 minutes on each side until the cheese melts and the bread is golden brown.
