Shrimp Bisque Base

    Sauté Shrimp

    In a large pot over medium heat, heat 2 tablespoons of olive oil. Add the raw shrimp and sauté until they turn pink, about 2-3 minutes. Remove the shrimp and set aside.

    Cook Aromatics

    In the same pot, add minced shallots and garlic. Sauté until translucent, about 5 minutes.

    Add Tomato Paste

    Stir in the tomato paste and cook for an additional 2 minutes.

    Add Stock and Cream

    Pour in the fish stock and bring to a boil. Reduce heat and stir in heavy cream, salt, black pepper, and cayenne pepper. Simmer for 15 minutes.

    Blend and Add Shrimp

    Using an immersion blender, blend the bisque until smooth. Add the sautéed shrimp and chopped fresh basil, stirring to combine. Cook for an additional 5 minutes to heat the shrimp through.

    Blend Basil Oil

    In a blender, combine fresh basil leaves and olive oil. Blend until smooth. Add salt to taste and blend again. Strain through a fine mesh sieve to remove solids.

Crispy Shallots

    Fry Shallots

    In a small saucepan, heat oil over medium heat. Add thinly sliced shallots and fry until golden brown and crispy, about 5-7 minutes. Remove shallots and drain on paper towels.

Sourdough Bread

    Toast Sourdough

    Toast the sourdough slices until golden brown. You can use a toaster or a skillet for this.
