Rinse the russet potatoes under cold water to remove any dirt. Cut each potato into thin strips, approximately 1/4 inch thick.

Soak Potatoes
Place the cut potatoes in a large bowl and cover them with cold water. Let them soak for at least 30 minutes to remove excess starch. This helps in achieving crispy fries.

In a large, heavy-bottomed pot or deep fryer, add the vegetable oil and heat over medium-high heat until it reaches 350°F (175°C).

After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

Carefully add the dried potato strips to the hot oil in batches, being careful not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy.
