Method

For the Chai

  1. 1

    Prepare the Tea Base

In a medium saucepan, bring 2 cups of water to a boil.

  2. 2

    Steep the Tea

Once boiling, remove from heat and add the black tea bags. Let steep for 5 minutes.

  3. 3

    Add Milk and Spices

Remove the tea bags and return the saucepan to low heat. Stir in 1 cup of milk, 2 tablespoons of brown sugar, 1 teaspoon of ground cinnamon, 1 teaspoon of ground ginger, 1 teaspoon of ground cardamom, and 1 teaspoon of vanilla extract. Heat gently until warm, but do not boil.

  4. 4

    Serve the Chai

Pour the chai into mugs, filling each about three-quarters full.

For the Butterscotch Cold Foam

  1. 5

    Make the Cold Foam

In a mixing bowl, combine 1 cup of heavy cream, 3 tablespoons of butterscotch sauce, 1 tablespoon of powdered sugar, and 1 teaspoon of vanilla extract.

  2. 6

    Whip the Cream

Using an electric mixer, whip the mixture on medium speed until soft peaks form, about 3-5 minutes.

  3. 7

    Layer the Foam

Carefully spoon the butterscotch cold foam over the chai in each mug, creating a lovely layer on top.
