Eggs

    Scramble the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper until fully combined. Heat butter in a non-stick skillet over low heat until melted. Pour in the egg mixture and gently stir with a spatula, scraping the bottom of the pan occasionally, until the eggs are softly scrambled and slightly runny. Remove from heat and let carry-over cooking finish the eggs.

Avocado

    Prepare the Avocado

    Cut the desert avocado in half, remove the pit, and scoop the flesh into a bowl. Mash gently with a fork, add lime juice, and salt to taste. Mix until combined and set aside.

Potatoes

    Roast the Potatoes

    Preheat the oven to 425°F (220°C). Wash and dice the potatoes into small cubes. In a bowl, toss the potatoes with olive oil, salt, and paprika until evenly coated. Spread the potatoes on a baking sheet in a single layer and roast for 25-30 minutes, or until golden and crispy, flipping halfway through.

Tomato

    Char the Tomato

    Slice the tomato into thick rounds. In a skillet, heat olive oil over medium heat. Add the tomato slices and cook for 2-3 minutes on each side until charred and softened. Season with salt and set aside.

Bacon

    Cook the Bacon

    In the same skillet, add the Onyx bacon slices and cook over medium heat until crispy, about 4-5 minutes per side. Remove from the skillet and drain on paper towels.

Sourdough

    Toast the Sourdough

    In a separate skillet, melt butter over medium heat. Add the sourdough slices and toast until golden brown on both sides, about 2-3 minutes per side.
