Pickling Liquid

Avocado Puree

Method

Preparation of Pickled Shallots

  1. 1

    Make the Pickling Liquid

In a small saucepan, combine the white vinegar, sugar, and salt. Heat over medium heat, stirring until sugar dissolves. Remove from heat and let cool.

  2. 2

    Pickle the Shallots

Thinly slice the shallot and place in a glass jar. Pour the cooled pickling liquid over the shallots, ensuring they are fully submerged. Let them sit for at least 30 minutes.

Cooking the Bacon and Eggs

  1. 3

    Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy. Remove and let drain on paper towels. Reserve some bacon grease in the skillet for the eggs.

  2. 4

    Make Jammy Eggs

In a pot, bring water to a boil. Gently add the eggs and boil for 6-7 minutes. Remove and place in an ice bath for 5 minutes to stop cooking. Peel and set aside.

Preparing the Salad

  1. 5

    Prepare the Salad Base

In a large bowl, combine mixed greens, halved cherry tomatoes, crumbled blue cheese, sliced radishes, and chopped fresh herbs.

  2. 6

    Make Avocado Puree

In a blender, combine the avocado with lime juice and salt to taste. Blend until smooth and creamy.

Assembling the Salad

  1. 7

    Combine Ingredients

On a large platter or individual plates, layer the salad base. Top with crispy bacon, slices of jammy eggs, and pickled shallots.

  2. 8

    Drizzle with Avocado Puree

Spoon the avocado puree over the salad, and garnish with additional herbs if desired.
