    Prepare the Tortillas

    Cut the tortillas into quarters or strips. In a large skillet, heat a small amount of oil over medium heat. Add the tortilla pieces and fry until they are crispy and golden brown, about 3-5 minutes. Remove from the skillet and drain on paper towels.

    Cook the Chorizo

    In the same skillet, add the bacon chorizo and cook over medium heat until browned and fully cooked, about 5-7 minutes. Stir occasionally to break it up into smaller pieces.

    Prepare the Eggs

    In a separate pan, poach or fry the heritage eggs to your desired doneness (sunny-side up, over-easy, etc.). Season with salt and pepper.

    Prepare the Salsa

    If using a store-bought salsa, ensure it is heated. If making homemade salsa, blend together tomatoes, onion, cilantro, lime juice, and jalapeno to taste.

    Assemble the Chilaquiles

    In a large serving dish, layer the crispy tortilla pieces, followed by the cooked chorizo, and then pour the house salsa over the top. Gently toss to combine.

    Garnish and Serve

    Top the chilaquiles with the poached or fried eggs, a drizzle of crema, and sprinkle chopped jalapeno and cilantro on top. Serve immediately.
