Pastry Dough

Method

Prepare the Dough

  1. 1

    Activate Yeast

In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, sugar, and salt.

  3. 3

    Combine Wet Ingredients

In another bowl, combine the warm milk, activated yeast mixture, and beaten eggs. Mix until well combined.

  4. 4

    Make the Dough

Gradually add the wet ingredients to the dry ingredients, and mix until a soft dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.

  5. 5

    Incorporate Butter

Wrap the cold unsalted butter in plastic wrap, then roll it out into a thin sheet. Fold this sheet into the dough and knead gently to incorporate. Let the dough rest for 30 minutes.

Prepare the Almond Filling

  1. 6

    Mix Filling Ingredients

In a bowl, combine the almond paste, powdered sugar, softened butter, and vanilla extract. Mix until smooth and well combined.

Shape the Croissants

  1. 7

    Roll Out Dough

After the dough has rested, roll it out into a large rectangle on a floured surface.

  2. 8

    Cut Triangles

Cut the dough into triangles (approximately 4-6 inches wide at the base).

  3. 9

    Fill and Roll

Place a small amount of almond filling at the base of each triangle, then roll from the base to the tip to shape the croissant.

  4. 10

    Place on Baking Sheet

Arrange the rolled croissants on a baking sheet lined with parchment paper, leaving space between each.

Bake the Croissants

  1. 11

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 12

    Egg Wash

Brush the tops of the croissants with the egg wash for a glossy finish.

  3. 13

    Top with Almonds

Sprinkle sliced almonds on top of each croissant.

  4. 14

    Bake

Bake in the preheated oven for 20-25 minutes, or until golden brown.
