Preheat the Oven

Preheat your oven to 350°F (175°C).

Mix the Crust Ingredients

In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.

Form the Crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake the Crust

Bake in the preheated oven for about 10 minutes, or until lightly golden. Remove from the oven and let cool slightly.

Cheesecake Filling Preparation

Beat the Cream Cheese

In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer.

Add Sugar and Sour Cream

Gradually add the granulated sugar and sour cream to the cream cheese, mixing until fully incorporated.

Add Vanilla and Eggs

Mix in the vanilla extract. Then, add the eggs one at a time, mixing on low speed just until combined after each addition.

Incorporate Flour

Gently fold in the all-purpose flour until just combined, being careful not to overmix.

Pour and Bake

Pour the cheesecake filling over the cooled crust and smooth the top. Bake at 350°F (175°C) for 55-60 minutes, or until the center is set but still slightly jiggly.

Cool the Cheesecake

Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour, then remove and refrigerate for at least 4 hours or overnight.

Prepare the Berries

Rinse the fresh berries and pat them dry with a paper towel.

In a small bowl, toss the berries with powdered sugar. Let sit for 10 minutes to macerate.

Once the cheesecake is fully chilled, remove it from the springform pan and top with the sweetened berries just before serving.
