Greg's Conecuh Sausage Breakfast Bowl is an entire breakfast in the palm of your hand. Rice or creamy grits (reg or two-blend cheese), two large, scrambled eggs, topped with whole sausage, not crumbled, with two slices of toast.

In a skillet over medium heat, cook the Conecuh sausage for about 8-10 minutes, turning occasionally, until browned and cooked through. Remove from skillet and set aside.

Cook the Sausage

In the same skillet, scramble the two large eggs over medium heat. Season with salt and black pepper to taste. Cook until just set but still soft.

Prepare the Eggs

If using rice, ensure it is already cooked and warm it in a separate pot. If using grits, cook according to package instructions, adding cheese if desired until melted and creamy.

Prepare Rice or Grits

While the eggs and rice/grits are cooking, butter the bread slices and toast them in the skillet or toaster until golden brown.

Toast the Bread

In a bowl, layer the rice or grits at the bottom. Top with scrambled eggs and place the whole sausage on top. Serve with toasted bread on the side.
