Chill glass

Place an old-fashioned glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail to chill the glass.

Combine ingredients

In a mixing glass or shaker filled with ice, add 2 oz Koval gin, 0.5 oz elderflower liqueur, 0.25 oz simple syrup, 3 dashes grapefruit bitters, and 1 dash Angostura bitters (if using).

Stir and dilute

Stir the mixture for 20–30 seconds with a bar spoon until well chilled and slightly diluted (aim for a chilled, silky texture rather than over-dilution).

Prepare glass

Dump the ice water from the chilled old-fashioned glass (if used) and add a large ice cube or fresh ice to the glass.

Strain

Strain the stirred cocktail over the ice in the old-fashioned glass using a julep or Hawthorne strainer so no shards of ice enter the glass.

Express and garnish

Take a grapefruit peel and, over the drink, hold it skin-side down and give it a firm twist to express the oils onto the surface. Rub the peel around the rim of the glass, then drop it into the drink as a garnish.

Serve

Serve immediately. Recommend serving with a short cocktail pick or napkin; advise the drinker to sip slowly to enjoy the floral elderflower notes balanced by the gin and grapefruit bitters.
