Make quick pickle syrup

Combine 1 cup dill pickle brine, 3 tablespoons granulated sugar, and 2 tablespoons water in a small saucepan over low heat. Stir until the sugar fully dissolves (about 2–3 minutes). Do not boil; just warm enough to dissolve sugar and marry flavors. Remove from heat and let cool to room temperature (10–15 minutes). Strain through a fine mesh if there are any solids and reserve.

Juice and mix

Juice fresh lemons until you have about 3/4 cup (approximately 2 large lemons). In a pitcher, combine the lemon juice and 2 cups cold water. Add the cooled pickle syrup to the pitcher and stir well to combine. Taste and adjust: if you want more tartness, add more lemon juice (by 1 tablespoon increments); for more sweetness, add 1 teaspoon sugar or more pickle syrup.

Chill

Add 2 cups of ice directly to the pitcher to chill the mixture, or refrigerate the combined lemonade for 15–20 minutes before serving for a colder, less diluted result.

Assembly & Garnish

Build the mocktail

Fill 4 tall glasses with ice. Pour the pickle lemonade evenly among the glasses (about 1 cup per glass). If you prefer a fizzy mocktail, top each glass with about 2 tablespoons (up to 1/4 cup) club soda or sparkling water.

Garnish and serve

Garnish each glass with 1 thin dill pickle slice, 1 lemon wheel, and a small sprig of fresh dill. Stir gently once and serve immediately.
