    Wash and scrub the sweet potatoes thoroughly. Leave the skin on for texture and nutrients. Trim the ends, then cut the potatoes into 1/4–1/2-inch thick sticks (about fry-shaped). Aim for uniform size so they cook evenly—you should get roughly 2–3 cups per large potato.

    Place the cut sweet potato sticks in a large bowl of cold water and soak for 20–30 minutes to remove excess starch. If short on time, you may skip soaking, but crispening will be slightly reduced.

    Drain the potatoes and spread them on clean kitchen towels or paper towels. Pat completely dry—this step is crucial for getting the exterior to crisp.

    Coat with cornstarch and oil

    Return the dried fries to a dry bowl. Sprinkle the cornstarch over them and toss gently to coat each fry in a light dusting. Drizzle the olive oil over the fries and toss until evenly coated. The cornstarch helps create a light crust while the oil promotes browning.

    In a small bowl, combine the smoked paprika, garlic powder, ground cumin, salt, black pepper, and chili powder if using. Sprinkle the spice mix over the oiled fries and toss until evenly distributed.

    Spread the seasoned fries in a single layer on the prepared baking sheet (or on the wire rack). Make sure fries are not overlapping; crowding causes steaming and sogginess. Use two sheets if necessary.
