Brown the beef
Increase heat to medium-high. Add the ground beef and break it up with a spoon. Cook until no longer pink and nicely browned, about 6–8 minutes. Drain excess fat if the pan seems very greasy, leaving a little for flavor.

Build the chili
Stir in the tomato paste and cook 1 minute. Add ketchup, Worcestershire sauce, chili powder, cumin, smoked paprika, brown sugar, salt, and black pepper. Stir to coat the beef and cook 1–2 minutes to bloom the spices.

Simmer
Pour in the beef broth, bring to a gentle simmer, then reduce heat to low. Simmer uncovered for 12–15 minutes, stirring occasionally, until flavors meld and mixture thickens slightly.

Adjust thickness
If the chili is thinner than desired for topping dogs, whisk the cornstarch into the cold water to make a slurry and stir into the simmering chili. Cook 1–2 minutes until thickened. Taste and adjust seasoning with additional salt, pepper, or a pinch more brown sugar if needed. Keep warm on lowest heat while you prepare the dogs.

Prepare buns
Butter the insides of the buns lightly. Heat a large skillet over medium heat and toast the buttered side of each bun until golden brown, about 1–2 minutes per side. Remove and set aside, toasted side up.

Cook hot dogs
In the same skillet, add 1 tablespoon neutral oil and heat over medium-high. Add the hot dogs and sear, turning occasionally, until nicely browned and heated through, about 5–6 minutes. Alternatively, grill or simmer to your preference.

Assemble dogs
Place a cooked hot dog into each toasted bun. Spoon a generous portion (about 3–4 tablespoons) of the house-made chili over each hot dog.

Cheese and onions
Immediately sprinkle about 1/4 cup shredded sharp cheddar over the hot chili so the heat will slightly melt the cheese. Top with a heaping tablespoon of finely diced raw yellow onion per dog to provide crunch and sharpness.

Finishing touches
If using, add pickled jalapeños and a few dashes of hot sauce to taste. Serve the Schwar – Bomb Chili Dogs hot. Leftover chili can be refrigerated for up to 3 days.
