    Prepare the chicken

    If you don't have cooked grilled chicken, preheat a grill or grill pan to medium-high. Pat 2 boneless, skinless chicken breasts dry, brush with 1 tablespoon olive oil and season lightly with 1/4 tsp salt and 1/4 tsp black pepper. Grill 5–7 minutes per side (depending on thickness) until internal temperature reaches 165°F (74°C). Let rest 5 minutes, then slice into 1/4-inch strips. If using leftover or rotisserie chicken, slice to similar thickness.

    Prepare produce and cheese

    Wash and dry 5 cups spring mix and place in a large salad bowl. Rinse and pat dry 1 cup cherry tomatoes, then halve them. Wash peaches, remove pits and slice into 1/4-inch wedges (about 2 peaches). Tear or slice 8 oz fresh mozzarella into bite-sized pieces or halve bocconcini. Tear 10 basil leaves into smaller pieces.

    Assemble salad

    Arrange the spring mix in the bowl, scatter the halved cherry tomatoes, sliced peaches, and mozzarella over the greens. Add the sliced grilled chicken on top and sprinkle torn basil leaves evenly. Reserve a little basil and a couple of peach slices for garnish, if desired.

Dressing & Finishes

    Make the dressing: in a small bowl or jar combine 3 tablespoons white balsamic vinegar, 4 tablespoons extra-virgin olive oil, 1 teaspoon honey, 1 teaspoon Dijon mustard, 1 teaspoon salt, 1/2 teaspoon freshly ground black pepper and 1 teaspoon lemon juice (optional). Whisk or shake vigorously until well emulsified. Taste and adjust seasoning — add more honey for sweetness or a pinch more salt if needed.

    Dress and toss: drizzle about half the dressing (about 3 tablespoons) over the salad and gently toss to coat ingredients without breaking the peaches or mozzarella. Add more dressing as needed, serving any leftover dressing on the side.

    Finish and serve: garnish with reserved basil leaves and peach slices, and give a final light grind of black pepper. Serve immediately so peaches and mozzarella remain fresh. If preparing ahead, keep dressing separate and add within 30 minutes of serving.
