Cucumber-Gin Smash (Signature Cocktail 1)

    Muddle

    In a cocktail shaker, place 4 thin cucumber slices, 8 fresh mint leaves, 0.5 oz simple syrup and 0.75 oz fresh lime juice. Gently muddle 6–8 times until cucumber releases juice and mint is aromatic but not torn to bits.

    Add spirits and ice

    Add 2 oz London dry gin to the shaker. Fill with ice (about 1 cup crushed or cubed), cap the shaker and shake vigorously for 10–12 seconds until well chilled.

    Strain and finish

    Double-strain into a chilled rocks glass filled with fresh crushed or cubed ice to remove solids. Top with 1.5 oz club soda and gently stir once to integrate.

    Garnish and serve

    Thread a cucumber ribbon or wheel and a mint sprig on a cocktail pick and rest on the glass. Serve immediately.

Smoked Maple Old Fashioned (Signature Cocktail 2)

    Build

    In a mixing glass, add 0.25 oz pure maple syrup and 2 dashes Angostura bitters. Add 2 oz bourbon or rye whiskey.

    Stir

    Fill the mixing glass with large ice cubes (one or two large cubes). Stir gently for 20–30 seconds until the drink is well chilled and slightly diluted (glass should feel cold).

    Smoke (optional)

    If using smoke: place the stirred cocktail in a rocks glass, cover briefly with a mixing tin or cloche, introduce a pinch of wood smoke (use a smoking gun or light a small amount of wood chips in a funnel), trap the smoke for 10–15 seconds, then remove cover. This step is optional but adds a warm aromatic note.

    Express orange oil & garnish

    Cut one orange peel, hold it over the glass and give it a sharp twist to express oils across the drink, then rub peel on the rim and drop it into the glass alongside one large ice cube. Serve.

Spicy Paloma Fizz (Signature Cocktail 3)

    Prep glass (optional salted rim)

    If desired, rub a grapefruit wedge around the rim of a highball glass and dip the rim into salt to coat. Set aside.

    Muddle jalapeño

    In a shaker, add 3 jalapeño slices and 0.5 oz agave syrup. Lightly muddle once or twice to release heat and aroma—don’t completely pulverize unless you want maximum heat.

    Add tequila and citrus

    Add 1.75 oz blanco tequila, 2 oz fresh grapefruit juice and 0.5 oz fresh lime juice to the shaker. Add ice (about 1 cup cubed).

    Shake & pour

    Shake vigorously for 8–10 seconds until chilled. Strain into the prepared highball glass over fresh ice.

    Top & garnish

    Top with 2 oz grapefruit soda (or sparkling water), stir gently to combine, and garnish with a grapefruit wheel. Adjust heat by adding an extra jalapeño slice as garnish if desired.
