Macerate peaches
Place 2/3 of the sliced peaches (reserve some for garnish) in a large nonreactive pitcher. Add the peach schnapps and simple syrup to the peaches. Gently muddle with a wooden spoon 6–8 times to release juices but not completely puree — you want pieces and juice. Let macerate 10–15 minutes at room temperature to intensify peach flavor.
Assemble Sangria

Combine wine and juices
Pour the white wine, peach nectar, and brandy (if using) into the pitcher over the macerated peaches. Stir gently to combine, scraping any fruit off the bottom. Add the remaining peach and the nectarine slices, plus the lemon and orange slices.

Chill
Cover the pitcher and refrigerate for at least 2 hours, preferably 4–6 hours, to allow flavors to meld. For best flavor, make the sangria up to 8–12 hours ahead, but add soda and ice just before serving.

Adjust sweetness
Taste the chilled sangria and adjust sweetness if needed. If you'd like it sweeter, stir in additional simple syrup (1–2 tablespoons / 15–30 ml at a time) or a splash of lemon-lime soda.

Ice and garnish
Fill glasses with ice. Using a slotted spoon, distribute fruit slices into each glass and pour the sangria over the ice. Garnish each glass with a sprig of fresh mint and a reserved peach slice on the rim if desired.

Serving note
Serve immediately after adding soda to preserve effervescence. Leftover sangria may be stored covered in the refrigerator for up to 24 hours (store without soda; add fresh soda when serving).
