    Prepare roll

    If the seeded roll is not pre-sliced, slice it lengthwise leaving a hinge if desired. Lightly toast cut side down in a skillet or under a broiler until just golden (about 1–2 minutes) and set aside.

    Warm pan and cook meat

    Heat a large skillet or flat-top over medium-high heat. Add oil and 1/2 tablespoon butter. When butter is foaming and pan is hot, add the thinly sliced beef in a single layer (you may work in batches). Season with 1/4 teaspoon kosher salt and a pinch of black pepper. Let the meat sear 30–45 seconds, then use a spatula to press and flip/tear into bite-sized shreds. Cook until just browned, about 1–2 minutes total for thin slices.

    Assemble with cheese

    Move the cooked beef to one side of the pan. Reduce heat to low. Place two Cooper Sharp cheese slices over the beef so they melt from the residual heat (cover skillet briefly with a lid for 30–60 seconds to encourage melting). If cheese isn't melting fully, warm the sandwich under a broiler briefly after assembling.

    Finish roll

    Spread the remaining 1/2 tablespoon butter on the toasted roll interior (optional) or butter the outside and briefly toast for extra crisp. Pile the cheesy beef into the seeded roll. Season with remaining 1/4 teaspoon salt and black pepper to taste if desired. Serve immediately.

Optional Vegetables (each +$1.25)

    Sauté onions, peppers, mushrooms (optional)

    If adding vegetables, heat the same skillet over medium heat and add 1/2 tablespoon butter. Add sliced onions and peppers; cook, stirring occasionally, until softened and starting to caramelize, about 6–8 minutes. Add mushrooms after 3–4 minutes if using and continue to cook until mushrooms release moisture and brown, about 4–5 more minutes. Season vegetables with 1/4 teaspoon salt and a pinch of black pepper. Remove vegetables to a plate and set aside. After cooking the beef (see Sandwich section), fold the cooked vegetables into the beef before placing the cheese on top so all components are combined and warmed together.
