Chill and prepare bottles
Keep all sparkling wine bottles chilled in an ice bucket or refrigerator until service. Place 1–2 bottles per 8–10 guests on hand and replenish from the back as bottles are consumed.

If offering multiple sparkling options (Champagne and Prosecco), label each bottle or set them on separate chill stations so guests can choose.
Juices & Mixers

Pour chilled juices into clearly labeled pitchers. Use one pitcher each for orange juice and cranberry juice. If offering grapefruit juice or peach nectar, prepare separate pitchers for those as well.

Keep pitchers cold by setting them in a larger container with ice or placing them on a tray with ice packs. Refill pitchers from reserve containers as needed.

Taste each juice before service and, if any are too tart for your crowd, provide a small bowl of simple syrup so guests can sweeten to taste.

Wash and thoroughly dry all fruit. Slice oranges into wheels or half-wheels (about 12 slices). Halve strawberries and prepare bowls of raspberries, blueberries, pineapple chunks, and pomegranate seeds.

If offering fruit on skewers, thread 2–3 pieces of mixed fruit (e.g., strawberry, blueberry, pineapple) onto cocktail picks and drizzle lightly with simple syrup to keep them glossy.

Place mint sprigs in a small bowl and offer them as a garnish option. Keep lemons and extra sugar nearby for guest customization.

Provide signage with basic mixing guidance: classic mimosa = 1 part chilled juice to 2 parts sparkling wine (or fill flute 1/3 juice, 2/3 sparkling). Encourage guests to top with sparkling — pour sparkling wine into the flute first to avoid overflow when using pulpy juices.

To prepare a mimosa: place a piece of fruit or a few berries in the bottom or on the rim of a flute if desired. Pour 1/3 chilled juice into the flute, then gently top with chilled sparkling wine to avoid foaming over.

For a Bellini-style drink: add 1–2 oz peach nectar to flute (about 1/8 to 1/4 cup), then top slowly with sparkling wine.
