Hummus Base

    Prepare chickpeas

    If using canned chickpeas, drain and reserve the liquid. Rinse briefly under cold water. For a creamier hummus, pinch and remove loose skins from a few chickpeas (optional).

    Blend base

    In a food processor, add chickpeas, tahini, lemon juice, minced garlic, ground cumin and salt. Pulse to combine until mixture is coarse.

    Emulsify

    With the food processor running, slowly drizzle in 2 tbsp olive oil and 2 tbsp reserved chickpea liquid or water. Process 1–2 minutes until very smooth, stopping to scrape down the bowl as needed. Adjust texture with up to 2 more tbsp water/reserved liquid if too thick. Taste and adjust salt or lemon.

Toppings & Mix-ins

    Prepare toppings

    Crumble the feta. Finely chop the spinach so it will integrate well. Dice the peeled/seeded cucumber into small uniform pieces. Slice the roasted red peppers into thin strips and halve the pitted olives.

    Combine some mix-ins (optional)

    If you want a hummus with mix-ins folded in, transfer 3/4 of the hummus to a bowl and gently fold in half the crumbled feta, half the chopped spinach and half the diced cucumber to create a chunky, briny hummus. Return to serving bowl and smooth the top.

    Assemble platter

    Spoon hummus into a shallow serving dish, creating a shallow well in the center. Top the hummus with remaining crumbled feta, chopped spinach, roasted red pepper strips and halved olives arranged attractively. Drizzle 1 tbsp extra-virgin olive oil over the top and dust with smoked paprika.

Cheesy Bread

    Prepare bread

    Preheat oven to 400°F (200°C). In a small bowl, mix softened butter with minced garlic, dried oregano and black pepper until combined. Brush each bread slice lightly with the garlic-butter.

    Top with cheese

    Place slices on a baking sheet. Sprinkle shredded mozzarella evenly over each slice, then grate or sprinkle the Parmesan on top.

    Bake

    Bake in preheated oven 7–10 minutes until cheese is melted and bubbly and edges are golden. If you want browning on top, broil 1–2 minutes, watching carefully to avoid burning.

    Finish

    Remove from oven and let cool 1 minute. Serve warm alongside the hummus so guests can scoop hummus onto cheesy bread.
