Honey-Lime Balsamic Chicken (Marinade + Cook)

Prepare the marinade
In a medium bowl whisk together 2 tablespoons olive oil, 2 tablespoons honey, 2 tablespoons fresh lime juice, 1 tablespoon balsamic vinegar, minced garlic, smoked paprika, 2 teaspoons kosher salt, and 1 teaspoon freshly ground black pepper until smooth.

Marinate the chicken
Place 1 lb boneless skinless chicken breasts in a shallow dish or resealable bag. Pour the marinade over the chicken, turning to coat. Marinate in the refrigerator for at least 30 minutes and up to 4 hours (30–60 minutes is sufficient for flavor; longer will deepen the taste).

Grill the chicken
Remove chicken from the marinade and let excess drip off. Grill for 5–7 minutes per side, depending on thickness, until internal temperature reaches 165°F (74°C) and exterior has a nice char. Total cook time usually 10–14 minutes. Transfer to a cutting board and let rest 5 minutes.

Slice chicken
Slice the rested chicken into 1/4-inch thick slices across the grain. If desired, toss sliced chicken with 1–2 tablespoons balsamic glaze for extra shine and flavor.
