    Prepare strawberry syrup (if making fresh)

    If you don't have pre-made strawberry syrup, macerate 3-4 hulled strawberries with 0.5 oz simple syrup in a small bowl for 10 minutes, then press through a fine mesh sieve to yield about 0.5 oz syrup. Chill before using.

    Add 2 oz gin, 0.75 oz fresh lemon juice, 0.5 oz strawberry syrup, 0.25 oz simple syrup and 0.25 tsp freshly grated ginger into a cocktail shaker.

    Fill the shaker with ice (about 3/4 full) and shake vigorously for 10-12 seconds until well chilled and slightly diluted.

Effervescence & Finish

    Double-strain the cocktail into a chilled Collins or highball glass filled with fresh ice (use a fine mesh strainer if you used macerated strawberries to remove solids).

    Top with 1.5 oz chilled club soda, and add 2 dashes of Angostura bitters over the top so the aroma sits on the foam.

    Gently stir once with a bar spoon to integrate the soda without losing effervescence.

Garnish

    Thread a thin strawberry slice onto the rim or float a fan of 2-3 slices on top, add a lemon wheel on the rim, and finish with a mint sprig if using. Serve immediately.
