    Prep sprouts

    Preheat oven to 425°F (220°C). Trim the stem ends of 1 lb Brussels sprouts and remove any loose or yellow outer leaves. Cut larger sprouts in half through the stem; leave small ones whole so sizes are roughly uniform.

    Toss with oil and season

    In a large bowl, toss the prepared sprouts with 2 tbs extra-virgin olive oil, 1 tsp kosher salt, and 1 tsp freshly ground black pepper until evenly coated.

    Arrange for roasting

    Spread the sprouts cut-side down in a single layer on a rimmed baking sheet. Do not overcrowd — use two trays if needed. This ensures crisp edges.

    Roast

    Roast in the preheated oven for 20–25 minutes, checking at 15 minutes. Roast until the cut sides are deep golden-brown and the outer leaves are crisp. Shake the pan once halfway through to promote even browning.

For the bacon & finishing

    Cook bacon

    While the sprouts roast, cut 4 slices bacon crosswise into 1/2-inch pieces. In a large skillet over medium heat, cook the bacon pieces until crisp, about 8–10 minutes, stirring occasionally. Use a slotted spoon to transfer cooked bacon to a paper-towel-lined plate, reserving about 1–2 tbs bacon fat in the skillet. If more fat accumulates, drain off excess, leaving roughly 1 tbs.

    Garlic bloom

    Reduce heat to low. Mince 2 cloves garlic and add to the skillet with reserved bacon fat. Cook, stirring, just until fragrant and lightly golden, about 30–45 seconds — do not burn.

    Combine with sprouts

    When the sprouts are done roasting, transfer them (hot) to the skillet with the garlic and bacon fat. Add the crisp bacon pieces back in. Toss gently over low heat for 1–2 minutes so the garlic and bacon evenly coat the sprouts and flavors meld. Sprinkle 1 tsp fresh lemon juice and 0.25 tsp red pepper flakes; toss again.

    Finish with Parmesan

    Remove skillet from heat and immediately sprinkle 1 oz grated Parmesan cheese over the hot sprouts and toss to combine so the cheese melts slightly and adheres to the sprouts.

    Garnish and serve

    Taste and adjust seasoning with additional salt and pepper if needed. If using, chop 1 tbs fresh parsley and sprinkle on top. Serve hot on a platter or family-style bowl.
