    Make patties

    In a bowl, combine 1 lb ground beef with 1 tsp salt, 1 tsp black pepper, 1 tsp garlic powder and 1/2 tsp onion powder. Mix gently with your hands or a fork until just combined — do not overwork. Divide into 4 equal portions and form into slightly wider-than-bun thin patties (they will shrink). Create a small dimple in the center of each patty with your thumb to prevent puffing.

    Toast buns

    Heat a skillet over medium-low. Spread softened butter on cut sides of 4 slider buns. Add 1 tsp vegetable oil to the skillet and place buns cut-side down. Toast until golden, about 1–2 minutes. Remove and set aside.

    Cook patties

    Heat the same skillet to medium-high. Add 1 tbs oil and let it shimmer. Place patties into the hot skillet (do not overcrowd). Cook 2–3 minutes on the first side until well browned. Flip and immediately place a cheese slice on each patty. Continue cooking another 1–2 minutes for medium (cook longer if you prefer well done). Total cook time about 4–5 minutes. Transfer patties to a plate and tent with foil briefly.

    Assemble sliders

    Spread mayonnaise on the bottom halves of the toasted buns. Add a cooked cheeseburger patty to each bottom bun, top with 2 pickle slices and some thinly sliced red onion if using. Drizzle or spread ketchup and mustard on the top bun (adjust amounts to taste). Place tops on the sliders and serve immediately.

French Fries

    Prep potatoes

    Wash and peel the 2 large russet potatoes (peeling optional). Cut into 1/4"–1/3" thick sticks for classic fries. Place cut fries in a large bowl of cold water and soak at least 20 minutes (up to 1 hour) to remove surface starch — this helps crisping.

    Dry and season

    Drain the soaked potatoes and pat completely dry with clean kitchen towels or paper towels. If using cornstarch, toss the dry fries with 1 tsp cornstarch until evenly coated. In a bowl, combine 1 tsp salt, 1/2 tsp black pepper and 1/2 tsp paprika; set aside.

    Cook fries (pan/oven method — adaptable)

    Oven method (recommended for kitchen): Preheat oven to 425°F (220°C). Toss dried fries with 3 tbs vegetable oil until evenly coated. Spread in a single layer on a rimmed baking sheet (use two sheets if needed). Roast 12 minutes, flip fries, then roast another 8–12 minutes until golden and crisp. Immediately season with the salt/pepper/paprika mixture after coming out of the oven and toss to coat. Alternative quick pan-fry: Heat 3 tbs oil in a large heavy skillet over medium-high. Add fries in a single layer (work in batches). Cook, stirring occasionally, until browned and crisp, about 10–12 minutes. Drain on paper towels and season immediately.

    Place fries on a plate next to sliders and serve hot. Provide extra ketchup or dipping sauce if desired.
