    Pour the whole milk into a large pot and heat it slowly over medium heat until it reaches 85°F (29°C), stirring gently to prevent scorching.

    Once the milk reaches 85°F, remove it from heat and stir in the white vinegar. Let it sit for about 5 minutes to allow the curds to form.

    Add Rennet

    Dilute the rennet in a small amount of cool, non-chlorinated water. Add it to the milk mixture and stir gently for about 30 seconds. Let it sit undisturbed for 5-10 minutes, or until the curds have formed and separated from the whey.

    Using a long knife, cut the curds into small cubes (approximately 1 inch) to help release the whey. Let them sit for another 5 minutes.

    Cook the Curds

    Gently heat the curds over low heat, stirring occasionally, until they reach a temperature of 105°F (40°C). This should take about 10-15 minutes.

    Once heated, pour the curds into a colander lined with cheesecloth to drain the whey. Allow them to drain for about 10 minutes.

    Transfer the drained curds to a mixing bowl. Add the cream and salt. Mix gently to combine, ensuring that the curds remain intact.

    Sprinkle the cheddar cheese culture over the curds and mix gently. Allow the mixture to sit at room temperature for 1-2 hours to develop flavor.
