Method

Chicken Preparation

1

Prepare the Chicken

In a large bowl, mix the flour, salt, black pepper, paprika, and garlic powder. Dredge each chicken thigh in the flour mixture until well coated.

2

Fry the Chicken

In a large skillet, heat the olive oil over medium-high heat. Add the coated chicken thighs and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

Toppings Preparation

3

Sauté the Onions

In the same skillet, add the sliced onion and sauté until translucent and slightly caramelized. Add the roasted red peppers and stir to combine.

4

Add the Cheese

Place the fried chicken thighs back into the skillet on top of the pepper and onion mixture. Top each piece of chicken with shredded smoked Gouda cheese. Cover the skillet and allow the cheese to melt for about 2-3 minutes.

Mashed Potatoes Preparation

5

Cook the Potatoes

In a large pot, add the cubed potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain well.

6

Mash the Potatoes

Add butter, milk, salt, and black pepper to the drained potatoes. Mash until smooth and creamy.

Jalapeño Aioli Preparation

7

Mix the Aioli

In a small bowl, combine mayonnaise, minced jalapeños, lemon juice, minced garlic, and salt. Mix until well combined.
