Pretzel Nubbins

    Prepare the Dough

    In a large bowl, dissolve sugar and yeast in warm water. Let it sit for about 5 minutes until frothy.

    Mix the Ingredients

    Add flour and salt to the yeast mixture. Mix until a dough forms. Knead for about 5 minutes until smooth.

    Shape the Nubbins

    Divide the dough into small pieces and roll them into nubbins. Place them on a baking sheet lined with parchment.

    Boil and Bake

    In a large pot, bring water to a boil and add baking soda. Boil each nubbin for about 30 seconds, then place on the baking sheet.

    Bake

    Brush the nubbins with beaten egg and sprinkle with coarse sea salt. Bake in a preheated oven at 425°F (220°C) for 12-15 minutes.

Fried Pickles

    Prepare the Breading

    In a bowl, mix flour, cornmeal, paprika, salt, and black pepper. In another bowl, beat the egg.

    Bread the Pickles

    Dip each pickle slice into the egg, then dredge in the breading mixture.

    Fry the Pickles

    Heat oil in a deep fryer or large pot to 375°F (190°C). Fry the breaded pickles in batches until golden brown, about 2-3 minutes.

    Drain and Serve

    Remove the fried pickles and drain on paper towels. Serve warm.

Onion Rings

    Prepare the Batter

    In a bowl, combine flour, cornmeal, baking powder, and salt. In another bowl, whisk together egg and milk.

    Bread the Onions

    Dip each onion ring into the flour mixture, then into the egg mixture, then back into the flour mixture.

    Fry the Onion Rings

    Heat oil in a deep fryer or large pot to 375°F (190°C). Fry the onion rings in batches until golden brown, about 2-3 minutes.

    Remove the fried onion rings and drain on paper towels. Serve warm.

Cheese Curds

    In one bowl, place flour. In another bowl, beat the egg. In a third bowl, place breadcrumbs.

    Dip each cheese curd into the flour, then into the egg, and finally coat with breadcrumbs.

    Heat oil in a deep fryer or large pot to 375°F (190°C). Fry the breaded cheese curds until golden brown, about 2-3 minutes.

Dipping Sauces
