Pancake Preparation

In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

In another bowl, beat the egg and then add the buttermilk and melted butter. Mix until smooth.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are okay.
Filling Preparation

Cook the Bangers
In a skillet over medium heat, cook the banger sausages until browned and cooked through (about 10 minutes). Remove from heat and let cool slightly.

Wrap in Bacon
Wrap each sausage in two strips of bacon, ensuring they are fully covered. Secure the ends with toothpicks if necessary.

Heat the Pan
In a non-stick skillet or griddle, heat over medium heat and lightly grease it with butter.

Cook Pancakes
Pour about 1/4 cup of pancake batter onto the skillet. Place one bacon-wrapped banger in the center of the pancake. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes). Flip and cook for another 2-3 minutes until golden brown.

Repeat the process with the remaining batter and bacon-wrapped bangers, greasing the skillet as needed.
